Easy as Pie

Esteemed Judicial Figure sends this easy-yet-deliciouss Key Lime Pie recipe along... I found it on a Post-it while cleaning off my long-ignored and extremely messy desk. Along with an M&M and a chinese food delivery menu.

2 cans eagle brand sweetened condensed milk
3/4 c lime juice
2 eggs
Put in crust
Bake at 350 for 10 minutes.

Everyday Food

The first magazine in my birthday subscription to Everyday Food arrived yesterday. Thanks KB! I'm looking forward to reading/using/cooking from it. Adore it's small size. What's caught my eye already: a shrimp soup, strawberry everything, leek and fettuccine and Parmesan goodness. I'll keep you posted. Is it wrong to love MS so much? I think sometimes I want a house just so MSL becomes more relevant to my life. And Blueprint? Loveliness.

The Taste of Happiness

This fruit salad is, I have decided, what happiness tastes like. It's bright and vibrant, sweet and tangy. Kind of like your humble bloggers, right ladies? :-)

So I thought I'd kick off my return from a long hiatus with this recipe, courtesy of Ms. AS (formerly of NOLA, now of NYC). Oh, and it makes me even happier to have used my own-grown fresh mint in making it tonight!



Taste of Happiness Fruit Salad
2 Tb lime juice
1Tb canola oil
1Tb minced shallot
2tsp rice vinegar
1tsp honey
1/4tsp salt
Pinch of cayenne, or to taste
4 kiwis, peeled and diced
2 firm bananas, cut diagonally into 1/2-inch-think slices
1/2c diced red bell pepper
2 Tb thinly sliced fresh mint
2Tb chopped cashews, toasted

Whisk lime juice, oli, shallot, vinegar, honey, salt and cayenne in a medium bowl. Add kiwis, bananas, bell pepper and mint; toss to coat. Serve sprinkled with cashews.

Spring's Here! Quick Meal Ideas Needed


So, spring is here. There's tennis to play, enormous orders to edit, farmer's markets to visit, beach trips to plan, essay portions of bars to study for, and babies to poke.**

I'm apparently out of time. (How in the world does this happen? I'll tell you how. America's Next Top Model Marathons).

Quick and easy super-fast meal ideas are the order of the day, y'all. I generally like the kitchen, but now's the time to enjoy being out of the house . . . (Or watching ANTM reruns. Or reading Empire Falls. But I digress.) I need new ideas and some inspiration. And/or ways to clean out my pantry. Big bags of mixed greens to make fancy salads with just sit in my fridge, and I just cannot make myself eat them. Argh!

What I've been eating lately:

-Annie's Mac & Cheese w/ edamame add ins
- French toast (my new fav food, apparently)
- egg salad
- strawberries on everything
- couscous w/ roasted veggies & olives
-cantaloupe
-coffee. Lots of coffee.

Things that are in my pantry that I need to eat:
Gnocchi
rice
uncooked pintos (nothing speedy about this)
taco shells
corn tortillas
squash
zucchini
staples.
dried cranberries.


What else do I want to eat? What can motivate some healthy cooking? (French toast, while delicious, isn't at the forefront of healthy).
