Back! With Stuffed Peppers.

So David Kirsch is a columnist for Shape Magazine. Apparently he's written some book too. He has a recipe every month and I've noticed a pattern of obsession with quinoa. This month was no exception, but I'm willing to excuse it because the recipie is quite tasty. Here it is:

Red Peppers Stuffed With Quinoa
1/4 cup quinoa
1 cup water
2 red bell peppers
1/2 green apple, cored and chopped
1 tablespoon freshly squeezed lemon juice
1-1/2 tablespoons chopped fresh parsley
1-1/2 tablespoons chopped fresh mint
1 garlic clove, crushed
1 cup all-natural chopped tomatoes
3 scallions, thinly sliced
1/2 teaspoon olive oil
Sea salt
Freshly ground black pepper

Preheat the oven to 350° Fahrenheit. Rinse and drain the quinoa in a fine-mesh strainer under running tap water until the water drains clear. Bring the water to a boil in a small saucepan. Add the quinoa, and cook for 15 minutes over medium-low heat, until all of the water is absorbed. Set aside.

Halve the peppers lengthwise, and scrape out and discard the seeds and membranes. Leave the stems intact so the peppers hold their shape. Place the peppers skin side down in an ovenproof dish.

In a medium bowl, mix the apple and lemon juice. Add the quinoa, herbs, garlic, tomato, scallion, and oil. Season with sea salt and pepper to taste, and mix well.

Divide the quinoa mixture between the halved peppers. Pour a small amount of water in the dish around the peppers, and cook for 20 minutes, until the quinoa filling is hot.

MB's Whole Wheat Blueberry Bran Muffins

Adapting recipes is old hat (like adding mushrooms to anything) but in the context of baking it seems more dangerous. Luckily some friends with some sense (and a few more years of experience in the domestic realm) fixed this recipe into a brunch-worthy yet healthy muffin.

Inspired by the muffins at everyone's favorite non-chain bookstore/coffee shop in town, here's MB's Whole Wheat Blueberry Bran Muffins. Originally it looked like this http://www.epicurious.com/recipes/recipe_views/views/231587, but MB took out the oil and exchanged it for bananas. Brilliant. Other adaptations include the addition of a 1/2 tsp of lime oil and 2 tsp of dry/ground ginger, no figs and instead blueberries. Surprisingly light and fluffy.

Nonstick vegetable oil spray
1 cup all purpose flour
1/2 cup whole wheat flour
1/2 cup oat bran
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup blueberries
1/2 cup chopped pecans or walnuts

1/2 cup (packed) golden brown sugar
2 bananas
2 large eggs
1 1/4 cups reduced-fat (2%) buttermilk
1 tablespoon vanilla extract1
/2 tsp lime oil
2 tsp ginger (dry or ground)


Preheat oven to 400°F. Line 14 muffin cups with paper liners. Spray liners with nonstick spray. Whisk next 7 ingredients in bowl. Stir in blueberries and buts. Whisk sugar and mashed bananas in large bowl. Whisk in eggs, then buttermilk, and vanilla. Mix in dry ingredients. Divide batter among cups.
Bake muffins until browned on top and tester inserted into center comes out clean, about 18 minutes. Cool on rack. Makes 14.


The good news: this recipe is extremely forgiving. I couldn't find oat bran so I used wheat bran, skipped liners, didn't have lime oil or ginger so used some lime juice and added back cinnamon and nutmeg. Being the full-throttle cook that I tend to be, turns out after I'd mixed all the dry ingredients I realized I added 2/3 cups whole wheat flour and bran rather than 1/2 c of each. So, I added a bit more buttermilk and rising things (salt/baking powder/soda) and they still turned out just fine.

Easy as Pie

Esteemed Judicial Figure sends this easy-yet-deliciouss Key Lime Pie recipe along... I found it on a Post-it while cleaning off my long-ignored and extremely messy desk. Along with an M&M and a chinese food delivery menu.

2 cans eagle brand sweetened condensed milk
3/4 c lime juice
2 eggs
Put in crust
Bake at 350 for 10 minutes.

Everyday Food

The first magazine in my birthday subscription to Everyday Food arrived yesterday. Thanks KB! I'm looking forward to reading/using/cooking from it. Adore it's small size. What's caught my eye already: a shrimp soup, strawberry everything, leek and fettuccine and Parmesan goodness. I'll keep you posted. Is it wrong to love MS so much? I think sometimes I want a house just so MSL becomes more relevant to my life. And Blueprint? Loveliness.

The Taste of Happiness

This fruit salad is, I have decided, what happiness tastes like. It's bright and vibrant, sweet and tangy. Kind of like your humble bloggers, right ladies? :-)

So I thought I'd kick off my return from a long hiatus with this recipe, courtesy of Ms. AS (formerly of NOLA, now of NYC). Oh, and it makes me even happier to have used my own-grown fresh mint in making it tonight!



Taste of Happiness Fruit Salad
2 Tb lime juice
1Tb canola oil
1Tb minced shallot
2tsp rice vinegar
1tsp honey
1/4tsp salt
Pinch of cayenne, or to taste
4 kiwis, peeled and diced
2 firm bananas, cut diagonally into 1/2-inch-think slices
1/2c diced red bell pepper
2 Tb thinly sliced fresh mint
2Tb chopped cashews, toasted

Whisk lime juice, oli, shallot, vinegar, honey, salt and cayenne in a medium bowl. Add kiwis, bananas, bell pepper and mint; toss to coat. Serve sprinkled with cashews.

Spring's Here! Quick Meal Ideas Needed


So, spring is here. There's tennis to play, enormous orders to edit, farmer's markets to visit, beach trips to plan, essay portions of bars to study for, and babies to poke.**

I'm apparently out of time. (How in the world does this happen? I'll tell you how. America's Next Top Model Marathons).

Quick and easy super-fast meal ideas are the order of the day, y'all. I generally like the kitchen, but now's the time to enjoy being out of the house . . . (Or watching ANTM reruns. Or reading Empire Falls. But I digress.) I need new ideas and some inspiration. And/or ways to clean out my pantry. Big bags of mixed greens to make fancy salads with just sit in my fridge, and I just cannot make myself eat them. Argh!

What I've been eating lately:

-Annie's Mac & Cheese w/ edamame add ins
- French toast (my new fav food, apparently)
- egg salad
- strawberries on everything
- couscous w/ roasted veggies & olives
-cantaloupe
-coffee. Lots of coffee.

Things that are in my pantry that I need to eat:
Gnocchi
rice
uncooked pintos (nothing speedy about this)
taco shells
corn tortillas
squash
zucchini
staples.
dried cranberries.


What else do I want to eat? What can motivate some healthy cooking? (French toast, while delicious, isn't at the forefront of healthy).

Herb Garden & Pasta







Long time no anything on here! A missing attach-camera-to-the-computer cord has just been found so things are back on track. The weather's gotten beautiful here lately and I wanted to share my most recent work-in-progress. . . . In the pot, from left to right, is cilantro, parsley, and basil. They have a lovely view of the Capitol!Turns out herb gardens should be watered daily. Or they will wilt. But they're tough. I know I'm going to have to thin the plants more, but it just makes me so sad to kill the little baby plants. After I thinned the cilantro the first time, I stuck the extra ones into a vase with water and they're growing quite nicely.

In the meantime, an easy recipe to share: Martha's Spicy Shrimp and Tomato Pasta. Basically, a super-easy Fra Diablo. I only made it w/ 2 cans of tomatos, rather than 3, and so cut down on the red pepper and capers. I think you could add red wine to this recipe as well. Tip: I peeled the shrimp while waiting for the water to boil for the pasta.

It was 1) yummy, 2) a couple of meals worth, 3) the other eater-person seemed to enjoy it as well, and 4) it took no time to make. Under the totality of circumstances test, it was very good. And as I have plenty of evidence to back up that decision, my opinion is neither arbitrary or capricious. Long week? Yes. I'm off to play outside.

I'm itching to try ATP's scone recipe sometime this week! Sounds delicious!
